Capt H S Oberoi

Capt H S Oberoi is an outstanding Dairy Professional from National Dairy Research Institute
(NDRI) Karnal having 58 Years’ experience with 40 years at CXO level who has established
many a successful dairy business in India. He was a Commissioned officer in Indian Army in
the Corp. of Electrical & Mechanical Engineers (EME). His in-depth and exceptional
knowledge about various dairy and dairy based products, processes & business, supply chain,
vast experience in engineering & maintenance, dairy farming etc. puts him at the highest
pedestal of Indian Dairy Industry.
He worked as President, Parag Milk Foods for the last 12 years till July 2021 overlooking
Operations of its three Dairy Plants in Pune, Palamner and Rai (Haryana) processing 2.0 Mn
litres milk per day with major focus on Cheese Manufacturing, Product Development &
extensions and Business.


He install & commission Asia’s biggest state of the art fully automatic Cheese Plant with a
capacity of 80 MT per day, Paneer plant of 20 MT per day capacity and whey processing
facilities at Parag Dairy, Manchar. He was overlooking the UHT plant at Palamaner and
Yogurt at Rai which increased Parag Milk Foods’ business multi folds.


He designed the product, process and supply chain that helped grow cheese business of Parag
Milk Foods from a mere 100MT/month to currently 1500MT/month over 10 years. He is
instrumental in developing many other new products including different varieties of natural
cheese and processed cheese that were successfully launched.


Some of his key and outstanding contribution to Dairy Industry in India:
 Developed and launched commercial Mozzarella Cheese for the first time India. The first
customer was a Multi-National QSR company and hence, he is rightly called as the Father
of Mozzarella Cheese in India
 With close collaboration with Alpma, Germany developed an automatic Paneer plant with
20 MT per day capacity with an expansion provision of 2X. The technical design along
with the process and product design delivered 75 days’ shelf life while stored in home-
refrigerator.
 Possesses outstanding understanding and knowledge of Microfiltration, RO, Nano, Ultra
Filtration plant designs, operations and maintenance

 As part of an innovation team, he has helped develop various new age products such as
sports beverages, nutritional gym products, nutritional powders and Infant and Paediatric
Formulations
 Developed processes for lactoferrin, lactulose, Galacto Oligosaccharides (GOS), and
successfully commercialized pharmaceutical grade lactose, Colostrum Powder etc
 An expert in fermented and coagulated products and UHT process.
 Set up many a green field and brown field projects and carries substantial knowledge and
network to support export and domestic institutional business.


He is still learning and has visited many European R&D / Innovation centres for last 10 years
to keep up with the latest technological trends.
His disciplined life has kept him in good stead and he is always ready to contribute to Indian
Dairy Industry, Business and entrepreneurs even at the age of 78 years.
